Low-Carb Bacon Cheeseburger Casserole

This low carb cheeseburger casserole is a family and reader favorite. I’ve heard nothing but good reviews from everyone who’s tried this simple recipe. I think you’ll love it, too!

Alright y’all, for this recipe, you’re gonna need:

2 pounds of ground beef

2 cloves of garlic, minced

½ teaspoon of onion powder

1 pound of cooked bacon, cut into pieces

8 eggs

1 cup of heavy whipping cream

½ teaspoon of salt

¼ teaspoon of ground black pepper

1 (12 ounce) package of shredded Cheddar cheese, divided

Instructions:

Preheat your oven to 350 degrees F (175 degrees C).

Heat up a big skillet over medium-high heat. Cook and stir your ground beef with the garlic and onion powder until it’s nice and brown and crumbly, should take around 5 to 7 minutes. Make sure to drain and discard the grease.

Spread the beef onto the bottom of a 9×13-inch casserole pan. Stir in the bacon pieces.

In a separate medium bowl, whisk together your eggs, heavy cream, salt, and pepper until it’s all well combined. Then, stir in 8 ounces of your shredded Cheddar cheese.

Pour your egg mixture over the beef and bacon in your casserole pan. Then, top it all off with the remaining 4 ounces of cheese.

Bake your creation in the preheated oven until it’s nice and golden brown on top, should take about 30 to 35 minutes. And there ya have it, enjoy!
