
Butter Pecan Cookies
My soft and chewy butter pecan cookies are made with toasted pecans, brown sugar, and plenty of butter. They are incredibly easy to make with NO mixer and NO chilling required!
Ingredients:
1 cup Butter Unsalted, Melted
½ cup Granulated sugar
1 cup Brown sugar
2 Eggs Large
2 tsp vanilla extract
2½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1½ cups chopped pecans, toasted

Instructions:
Mix Wet Ingredients:
In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until well combined.
Add the eggs, one at a time, beating after each addition. Stir in the vanilla extract.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add this to the wet ingredients, mixing until just combined.
Fold in Pecans:
Fold in the toasted pecans.
Chill the Dough:
Cover the dough and refrigerate for at least 1 hour.
Bake:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes or until the edges are golden brown.
Cool and Enjoy:
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
